Irish Cream Bundt Cake
This cake works well with chocolate OR vanilla cake mix, it is all your preference.
1 (18.5oz) package cake mix
1 (3.4oz) package instant pudding mix
1/4 cup water
1/2 cup vegetable oil
3/4 cup Irish Cream Liqueur
1/2 cup of butter
1/4 cup water (again)
1 cup granulated sugar
1/4 cup Irish Cream (again)
Pre-heat oven to 325. Grease & flour 10″ bundt cake pan. In a large bowl combine cake & pudding mix. Mix in eggs, 1/4 cup water, 1/2 cup oil, 3/4 cup Irish Cream and beat on high speed with electric mixer for 5 minutes. Pour into bundt pan and bake for 60 minutes or until toothpick inserted in middle comes out clean.
Cool for 10 minutes, then place on serving dish. wingadingdingy tops and sides of cake with fork.
Glaze: In a large saucepan combine butter, 1/4 cup water and 1 cup sugar. Bring to a boil and boil 5 minutes, stirring constantly. Remove from heat and stir in 1/4 cup Irish Cream.
Spoon glaze over cake & brush onto sides of cake. Let it absorb into cake. Repeat until glaze is used up. Garnish with toasted coconut or pecans if desired.
