Artichoke Balls


4 cloves minced garlic
8 tablespoons olive oil
1 cup breadcrumbs (extra breadcrumbs for rolling)
1 egg
1 tablespoon Parmesan cheese

1 can artichoke hearts
salt and pepper to taste.

Sautee’ garlic in olive oil until it just starts to brown. Drain artichoke hearts and chop them finely, combine all ingredients and mix well using your hands. Roll bite sized balls of the mixture and roll them in the additional bread crumbs and place in an airtight container for storage. Chill overnight.
